3. PROFILE OF SKILLS AND COMPETENCES
General competences:
 
  • be well informed about culture, history and the present of the Czech nation within the European and world context;
  • formulate views and attitudes verbally and in writing, communicate in at least one other foreign language;
  • effectively organize and manage and participate in a team, including the ability to lead a team and cope with problematic situations;
  • know how to use information and ICT, have basic ICT skills;
  • use basic mathematics and the basic principles of physics and chemistry when needed;
  • act in an environmentally-conscious manner and in compliance with strategies for sustainability;
  • apply the fundamentals of health, occupational safety, and fire prevention and safety.

Vocational competences:

  • assess food quality and its use for making meals;
  • know the ways of portioning, storing and preliminarily treating ingredients;
  • prepare meals (warm meals, meals to order, cold meals) and drinks in accordance with the technical procedures and taking aesthetics into account;
  • operate the technical and technological equipment in a business;
  • consign meals and drinks, know the techniques of serving guests;
  • set up a menu taking into account the principles of diet and the nutritional needs of various groups of people;
  • set out a celebratory menu and menus for various occasions;
  • keep records on the movement of goods;
  • calculate the prices of goods and services;
  • make orders and carry out billing;
  • observe the hygiene regulations.
 
4. RANGE OF OCCUPATIONS ACCESSIBLE TO THE HOLDER OF THE CERTIFICATE 
The graduate can find work as a chef in the position of an employee in all kinds and types of businesses in the area of catering services. After acquiring the necessary practice in the profession, the graduate is ready to enter private enterprise in the hotel trade.
