3. PROFILE OF SKILLS AND COMPETENCES
General competences:
 
  • be well informed about culture, history and the present of the Czech nation within the European and world context;
  • formulate views and attitudes verbally and in writing, communicate in at least one other foreign language, use technical terminology;
  • educate themselves, work in an effective way and assess impartially results;
  • adapt themselves to the changing conditions of life and work, work well in a team and be responsible for assigned tasks;
  • work with information, use ICT;
  • use basic mathematics and the basic principles of physics and chemistry when needed;
  • know the present rights and duties of employers and employees and know how to conduct a job search;
  • act in an environmentally-conscious manner and in compliance with strategies for sustainability;
  • apply the fundamentals of health, occupational safety, and fire prevention and safety.

Vocational competences:

  • know how to wait on guests and the rules of waiting;
  • know how to prepare and finish meals in front of guests;
  • know how to prepare mixed drinks;
  • prepare and organise formal events;
  • communicate in different standard and formal situations when waiting on guests, including communication in a foreign language;
  • know how to receive, record and handle orders and settle bills with guests and clients;
  • prepare meal and drink menus based on gastronomic rules and prepare formal menus and menus for different occasions;
  • keep records about movement of merchandises and stock and calculate prices and account sales;
  • have basic knowledge of hotel accounting, management and marketing;
  • understand technical and technological equipment of the operation and use relevant equipment;
  • describe how regularly offered meals and drinks are prepared;
  • prepare different types of business correspondence and use modern office and information technology;
  • organise and handle teamwork, manage a team and solve problems;
  • organise and manage the operation of gastronomic facilities;
  • apply legal regulations in operating gastronomic facilities;
  • apply marketing results in managing gastronomic facilities;
  • check the quality of work and the observation of hygienic and occupational health and safety regulations;
  • be professional and have good manners.
 
4. RANGE OF OCCUPATIONS ACCESSIBLE TO THE HOLDER OF THE CERTIFICATE 
The graduate can hold middle management positions in gastronomic facilities and services, including high-class facilities and services, performing work activities related to the operation of gastronomic facilities, sales and waiting.
Examples of possible jobs: waiter-waitress, headwaiter and operations specialist.
